Ingredients you need:
....your purchased mix
1 1/2 cups water
1 Tablespoon apple cider vinegar
1 egg
2 Tablespoons molasses
1 Tablespoon honey
1 1/4 cups diluted canned milk (90°)
2 Tablespoons butter, melted
Step 1: Place 1 ½ cups
water into a small saucepan.
Bring to a boil.
Add in the packet of
grains.
Step 2: Return the mixture to a boil.
Step
3: Cover and simmer for 10 minutes.
Be sure to place the lid on a tilt so it doesn’t boil over.
Step 4: Turn
off heat after 10 minutes.
Set the lid all the way down onto the pan
And allow to rest, with the lid on, for
30 minutes.
Step 5: Just before the 30 minutes rest time is up, for
the soaking grains, place the packet of flour into a large bowl.
Step 6: Add the soaked grains to the flour mixture.
You want to do this while the
grains are still warm.
Step 7: Now add in all the wet ingredients.
The apple
cider vinegar, egg, molasses, honey,
diluted canned
milk (warmed to 90°), and melted butter.
-----make
diluted canned milk by combining equal parts water and evaporated canned milk.
Warm the diluted canned milk briefly so
that it’s warm, but to hot.
Step 8: Stir all the
ingredients together until well combined.
Step 9: Cover with plastic wrap and let rest for 90
minutes.
Step 10: Put a spoon into the risen dough and stir
briefly
Step 11: Divide the dough evenly between two glass loaf
pans that have been greased on the bottom only.
You don't want to make just one loaf, even though it looks like you could or should.
Making two shallow loaves will give you a better finish product.
This bread is heavy, dense and crumbly....but so so good for you.
It's wonderful for making French Toast.
Step 12: Cover with
plastic wrap and let rise for 1 hour.
Step 13: Preheat the
oven to 450° during this final rise.
Step 14: Place an iron
skillet on the bottom shelf of the oven during the preheat.
Step 15: Just before
placing the bread into the oven, pour 1 cup of water into the iron skillet.
Step 16: Bake at
450° for 50 minutes.
